5-ingredient roasted brussels sprouts

Roasted vegetables are healthy, easy, and the perfect addition to just about any meal.

I LOVE Brussels sprouts cooked in any way/shape/form. Roasting them is just a simple and healthy way of getting them onto the dinner table.


Ingredients

  • 5 cloves garlic, minced

  • 3 lb Brussels sprouts, halved

  • Avocado oil

  • Salt and pepper to taste

  • 1 cup fried shallots 

Directions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. In a large bowl, combine garlic and Brussels sprouts. Add enough oil to evenly and lightly coat the Brussels sprouts. Season will salt and ground pepper. 

  3. Working in batches, pour mixture onto a baking sheet in a single layer and roast for about 30 minutes. Use spatula to mix  around half through. 

  4. Collect cooked Brussels sprouts in a large baking dish. Sprinkle fried shallots all over the top of the dish. Bake in oven for 8-10 minutes. Remove from heat and serve hot.
