5-ingredient roasted brussels sprouts
Roasted vegetables are healthy, easy, and the perfect addition to just about any meal.
I LOVE Brussels sprouts cooked in any way/shape/form. Roasting them is just a simple and healthy way of getting them onto the dinner table.
Ingredients
5 cloves garlic, minced
3 lb Brussels sprouts, halved
Avocado oil
Salt and pepper to taste
1 cup fried shallots
Directions
Preheat oven to 400 degrees Fahrenheit.
In a large bowl, combine garlic and Brussels sprouts. Add enough oil to evenly and lightly coat the Brussels sprouts. Season will salt and ground pepper.
Working in batches, pour mixture onto a baking sheet in a single layer and roast for about 30 minutes. Use spatula to mix around half through.
Collect cooked Brussels sprouts in a large baking dish. Sprinkle fried shallots all over the top of the dish. Bake in oven for 8-10 minutes. Remove from heat and serve hot.
