black bean + quinoa bowl
This black bean and quinoa recipe is a great source for protein and fiber and it’s super simple to make!
Sending a quick and easy recipe your way! The prep time only takes about 10 minutes and once it’s in the pot, the ingredients work their own magic. We all know how busy life can get sometimes, so it can be extremely difficult to find the time to cook/meal prep for the week. When it comes to cooking, I’m all about convenience. Unless it’s a weekend! Then, I tend to experiment and get a little fancy ;)
Ingredients
1 tbsp olive oil
1 large yellow onion, chopped
4 cloves garlic, minced
1 cup uncooked quinoa
2 cups vegetable broth
¼ tsp cayenne pepper
1 tsp ground cumin
½ tsp salt
½ tsp freshly ground black pepper
1 cup frozen corn
2 cups cooked black beans
½ cup cilantro, chopped
Directions
In a medium sized pot, heat the olive oil. When hot, add the onion and saute for 5 minutes, stirring often. Add garlic and stir for about a minute, until the garlic is fragrant.
Add in the quinoa and cover with vegetable broth. Stir in the cayenne pepper, cumin, salt, and pepper. Bring to a boil. Cover the pot and reduce the heat. Let simmer for 15-20 minutes, until all of the liquid is absorbed.
Stir in the corn and black beans. Let sit until the corn is cooked through, usually about 5 minutes. Stir in the cilantro. Serve warm and enjoy!
