vegan roasted acorn squash
This 4-ingredient, vegan side dish is as simple as it gets when it comes to cooking with squash.
Ingredients
1 acorn squash (halved, seeded, and cut into 1-inch thick slices)
3 tbsp vegan butter, melted
1 tbsp coconut sugar
1/2 tsp ginger, powder or freshly grated
Directions
Preheat oven to 350 degrees Fahrenheit
In a small bowl, mix butter, sugar, and ginger together.
In a large mixing bowl, toss squash slices together with the wet mixture, making sure to evenly coat each slice.
Prepare a baking sheet with parchment paper. Lay squash slices out evenly on pan so that they do not touch one another.
Bake in oven for 20 minutes. Remove pan from oven, flip each slice, and bake for another 20 minutes (or until golden brown). Serve hot.
