sukju namul (bean sprout salad)
Sukju namul is a refreshing and popular Korean side dish that helps to mellow out the kicks we usually get from the spicy dishes I make.
Ingredients
1 lb mung bean sprouts, rinse and drained
1 scallion, minced
1 clove garlic, minced
1 tbsp sesame oil
1 tsp sesame seeds (Optional: toasted)
Pinch of salt & black pepper
Directions
Fill a medium saucepan halfway with water and bring to a boil. Prepare an ice bath in a large bowl. Carefully add sprouts into boiling water, cover, and let blanch for no more than 1 minute. Drain immediately and transfer sprouts to ice bath for 30 seconds. Drain and squeeze out excess water.
Toss sprouts with remaining ingredients.
