smooth celery soup
Time to bust out that immersion blender for this easy peasy celery soup.
Ingredients
1 tbsp (vegan) butter
1 small onion, chopped
2-3 cloves garlic, chopped
5-6 celery ribs, chopped
1 potato, chopped
pinch of salt
1/2 tsp ground black pepper
1 tsp white pepper powder
1 tsp cayenne powder
1 tsp dill
2 cups vegetable broth
Directions
Melt butter in medium saucepan over medium-high heat. Stir in onion and garlic to lightly brown. Add remaining ingredients except broth. Let cook for 2-3 minutes. Mix in broth and bring to a boil. Cover and lower heat to a simmer and let cook for 25 minutes.
Remove from heat. Use an immersion blender to puree all ingredients into your desired consistency. Serve hot.
