smooth celery soup

Time to bust out that immersion blender for this easy peasy celery soup.

Ingredients

  • 1 tbsp (vegan) butter

  • 1 small onion, chopped

  • 2-3 cloves garlic, chopped

  • 5-6 celery ribs, chopped

  • 1 potato, chopped

  • pinch of salt

  • 1/2 tsp ground black pepper

  • 1 tsp white pepper powder

  • 1 tsp cayenne powder

  • 1 tsp dill

  • 2 cups vegetable broth

Directions

  1. Melt butter in medium saucepan over medium-high heat. Stir in onion and garlic to lightly brown. Add remaining ingredients except broth. Let cook for 2-3 minutes. Mix in broth and bring to a boil. Cover and lower heat to a simmer and let cook for 25 minutes.

  2. Remove from heat. Use an immersion blender to puree all ingredients into your desired consistency. Serve hot.
