red miso glazed chicken
Baked chicken thighs are one of my go-to's because they're just so simple for meal prepping!
Ingredients
3 cloves garlic, minced
1/4 cup vegan butter, melted
1/4 cup red miso paste
1 tbsp mirin (rice wine)
1 tbsp raw honey
1/4 tsp ground white pepper
1/2 tsp ground black pepper
2 lb chicken thighs ( I used boneless but bone-in works just as fine)
avocado oil
Directions
Preheat oven to 425 degrees Fahrenheit. Line baking tray with oiled parchment paper and set aside.
In a large mixing bowl, stir together all ingredients except for the chicken. Mix well. Add chicken thighs into bowl and mix well so that chicken is completely covered with the marinade. Cover and let sit in fridge for at least 30 minutes.
Remove chicken from fridge and evenly place on baking sheet so that pieces do not touch. Bake for 20-25 minutes, flip each piece, and bake other side for another 10-15 minutes, or until fully cooked.
