oi muchim (Korean spicy cucumber salad)

This one of my favorite banchan dishes and it’s SO easy to whip up.

Ingredients

  • 1 Korean cucumber, thinly sliced ( I use regular cucumbers too)

  • 1 tsp salt

  • 1 tbsp Korean chili pepper flakes

  • 1 scallion, minced

  • 1 clove garlic, minced

  • 1 tsp rice wine vinegar

  • 1 tsp sesame oil

  • 1 tsp sesame seeds

Directions

  1. Toss cucumber slices with salt and set aside for 10 to 15 minutes. Drain any excess liquid.

  2. Mix all ingredients together until cucumbers are well coated. Chill until ready to serve.
