If you haven't heard, this matcha craze is actually healthy for you! Matcha green tea is packed with antioxidants, vitamins, and stress-reducing amino acids.

Catechins

Epigallocatechin gallate (EGCG) is a major catechin found in matcha that has various health benefits. It helps to suppress the appetite, supports cognitive health, and promotes cardiovascular health. Catechins also have potent antioxidant activity that helps to protect the immune system against bacterial and viral infections.

Vitamin C

Another antioxidant! Vitamin C helps to eliminate free radicals from the body and boosts the immune system. Green teas, like matcha, contain way more vitamin C than black and oolong teas because the latter teas undergo a fermentation process that decreases the concentration of this essential nutrient.

L-theanine

L-theanine is an amino acid that helps to protect your brain cells from stress by promoting relaxation and enhancing cognitive function. While matcha contains a significant amount of caffeine, L-theanine helps to offset the jitters and improve your mental clarity.


Ingredients

  • 4 eggs, beaten

  • 1 tsp vanilla/coconut extract

  • 1 1/3 cup almond milk

  • 4 tbsp butter, melted

  • 1 cup almond flour

  • 1 cup oat flour (I grind rolled oats into a coarse powder)

  • 1/3 cup coconut sugar

  • 2 tbsp baking powder

  • 4 tbsp matcha powder

  • 1/4 tsp salt

  • optional toppings: yuzu juice, maple syrup, honey, berries, toasted nuts/seeds, Greek yogurt, etc.

Directions

  1. Combine wet ingredients (eggs, vanilla extract, almond milk, butter) in a large mixing bowl.

  2. Mix dry ingredients (almond & oat flour, baking powder, matcha powder, salt) together in a medium bowl, and sift mixture into wet ingredients.

  3. Mix batter well to remove all clumps of flour. Let the batter sit for 15 minutes at room temperature.

  4. Give the batter a stir. Heat and butter the frying pan on medium heat, ladle in 1/4 cup batter, and cook until bubbles have formed and popped on the pancake. Flip and cook until bottom is golden.

  5. Serve while hot with any topping of your choice.
