garlic scapes + guacamole

Ever had guac with garlic scapes? Because that's the only way I want to have guac from here on out!!

Seriously. Scrap the garlic powder and go get yourself some fresh garlic scapes. You can find them in Asian food markets or at your local farmer’s market.

I used one scape per avocado in this guacamole and it is FIRE! Unlike regular garlic, these long and lanky scapes are sweeter, refreshing, and not as spicy, which means you can add them raw into anything where you'd normally use garlic.

Tell me how you use your scapes because ya girl is trying to use these as much as possible this summer!


Ingredients

  • 3 avocados, peeled & pitted

  • 3 garlic scapes, minced

  • 2 small tomatoes, finely diced

  • 1 red onion, finely diced

  • 1 jalapeno, finely diced

  • 1 cup cilantro, minced

  • Juice of 1-2 limes

  • 1 tsp Everything but the Bagel Sesame Seasoning from Trader Joe’s

  • salt & pepper to taste

Directions

  1. In a large mixing bowl, lightly mash the avocados to just break them up a bit. Avoid overly mashing until it becomes too soft.

  2. Stir in all remaining ingredients and mix well until thoroughly combined. Add lime juice in increments and adjust to taste.
