tofu + chives stir-fry

A quick and flavorful vegan dish perfect for any meal, any time.

You may be thinking, “but isn’t soy bad for you?” Unfortunately, much of the soy products here in our country are subjected to heavy modifications and use of pesticides. However, eating whole, organic soy has many reported health benefits - especially if these soy products have undergone fermentation. In many Asian cultures, soy products are usually fermented, thus making soy easier to digest and much healthier because of the extra probiotics and nutrients. So, what’s the verdict? Always look for unprocessed, fermented, and organic soy products, such as miso, tempeh, natto, and certain types of tofu.


Ingredients

  • 2 cloves garlic, minced

  • 1 medium onion, chopped

  • 1 block super firm tofu, cut into 1-inch pieces 

  • 2 cups tofu puffs, halved (best if prepared via an air fryer)

  • 1 tbsp tamari 

  • 1 tbsp spicy red pepper bean paste

  • 1 cup Shimeji mushrooms

  • 1 bunch chives, cut into 1-inch pieces

  • 1 stalk leeks, sliced thinly

  • 1 tbsp rice wine

  • 1 tsp turmeric

  • 1/2 tsp freshly ground black peppercorns 

  • 1 tsp paprika

  • 1 tsp sesame oil

  • Extra virgin olive oil

Directions

  1. Heat skillet on medium-high heat and coat with oil. 

  2. Sautée garlic and onions together until browned. Add in tofu, tamari, and red pepper paste. Stir for 1 minute. 

  3. Add in all other ingredients. Stir and cook until all vegetables are soft. Remove from heat and serve hot.
