sweet potato buddha bowl

My new obsession has been making buddha bowls, and this is by far one of my favs! Trying my best to keep my body running on good quality fuel and energy during a stressful time. The best part is: there are so many variations that you can make, the options are pretty much endless, and this one is vegan. This one includes sweet potatoes, chickpeas, kale, and broccolini, some of my absolute favorite ingredients. Check out the recipe below and let us know what you think!
Buddha Bowl Ingredients
2 tbsp avocado oil
1 medium red onion, sliced
2 sweet potatoes, cut into 1-2 inch chunks
2 handfuls of kale
1 bundle of broccolini, chopped
Salt and pepper to taste
2 cups chickpeas, cooked
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
½ tsp oregano
¼ tsp turmeric
¼ tsp salt and pepper
Tahini Sauce Ingredients
¼ cup tahini
½ lemon, juiced
2-4 tbsp hot water
Directions
Preheat oven to 400 degrees. Arrange sweet potatoes and onion on a baking sheet. Drizzle with avocado oil and bake for 15 minutes.
Remove from oven, add broccolini, and drizzle with a little bit of oil, salt and pepper. Bake for another 15 minutes.
Remove from oven and add kale. Drizzle kale with oil and a touch more of salt and pepper. Bake for another 10 minutes. Set aside.
Add chickpeas to a mixing bowl and toss with seasonings. Heat a skillet over medium heat. Once hot, add 1 tbsp avocado oil and sauté chickpeas, stirring and flipping frequently. 12 minutes over medium heat seemed to be the perfect time! Remove from heat and set aside.
Prepare tahini sauce by adding the tahini and lemon juice. Whisk to combine ingredients. Add hot water until a liquid sauce is formed. Set aside.
To assemble: Use the sweet potatoes as your base, pile on the veggies, add chickpeas, and drizzle with tahini sauce… ENJOY!
