pink radish soup

How can you not like this pink soup?! Radishes have a crisp spice that shines beautifully in this creamy soup. It’s wonderfully refreshing for the season since it can be served either hot or chilled.

Ingredients

  • 1 tbsp butter

  • 2 cloves garlic, smashed

  • 1 small onion, chopped

  • 8-10 radishes, quartered

  • 2 radishes, julienned

  • 1 tsp paprika

  • 1 tsp white pepper

  • 1/2 tsp black pepper

  • 2 cups oat milk

  • Optional toppings: mint leaves and Greek yogurt

Directions

  1. Melt butter in a saucepan over medium-high heat. Add garlic and onion. When garlic is lightly browned, stir in chopped radishes and spices. Cook until they are 50% translucent. Carefully mix in oat milk, cover with lid, and let simmer for 15 minutes.

  2. Remove lid and use an immersion blender to purée everything until smooth. Let simmer for another minute or two.

  3. Serve hot or chill in refrigerator when cooled. Top with, julienned radish, mint leaves, and a tablespoon of Greek yogurt. Enjoy!
