oyster mushroom stir-fry

Ingredients

  • avocado oil

  • 2-3 cloves garlic, minced

  • 2 scallions, chopped (whites & greens separated)

  • 3/4 lb oyster mushrooms, cleaned and separated

  • 1 tsp hoisin sauce

  • 1 tsp soy sauce

  • 1/2 tsp white pepper powder

Directions

  • Heat and lightly oil skillet over medium-high heat. Add garlic and whites of scallions. Stir and cook until scallions soften.

  • Stir in remaining ingredients. Cover and let cook for 2 minutes. Remove lid and let cook until moisture evaporates. Serve hot and enjoy!
