lemongrass shroom steak
Yep, you read that correctly. This is a recipe for a mushroom steak marinated with loud flavors.
If you haven’t already, go check out my getting geeky blog post about the benefits of eating Lion’s mane mushrooms. It’s packed with healthful properties and it has a great texture for omnivores looking for that meatiness in plant-based foods.
Ingredients
3/4 lb Lion’s mane mushrooms
avocado oil
1 scallion, chopped (white & green parts separated)
Directions
Using a damp paper towel/cloth or brush, gently brush off any visible dirt off of the mushrooms. Slice mushrooms into 1-inch thick slices. In a large bowl, combine Lion’s mane slices and contents of Lemongrass Starter Pack. Coat mushrooms in mixture and let sit for 5 to 10 minutes.
Heat and oil skillet over medium-high heat. Place marinated mushroom steaks into skillet and let sear on one side for 3 minutes to let it brown. Use a spatula to gently flip steaks over. Sprinkle white parts of scallions into the skillet. Using the spatula, gently press on each steak to release some of the water. Allow steaks to brown for 2 minutes. Remove from heat and serve hot. Garnish with green parts of scallions.
Optional: You may serve this with a bed of greens or grains.
